We plant these in south Louisiana in the fall for early winter picking - it doesn't get cold here until January. I pulled up two small bulbs in November and steamed them for a good while, but they were so tough I needed a steak knife to cut into them. The remaining plants have overwintered well and are particularly beautiful. I'm hoping they will bolt soon for seeds, but they don't look like they have any intention of doing so for some time. The leaves aren't particularly spicy, so I'm leaving them for the swallowtails. I'm not sure if this is just a seed variety or if the bulbs are supposed to be edible. If anyone grows one with a decent bulb, I'd like to know. .
