In the desert, we don't get much opportunity for summer greens, so I've been pretty thrilled with this calaloo. Not only does it tolerate the extreme heat, it downright thrives. If you don't want a field of it, make sure you cut off the seed heads before they mature and feed them to your chickens.
If you want to eat it raw, it is best to harvest the plants whole when they're about a foot or so tall. Too much bigger, and it is best cooked. You can also peel the thick stems and cook it as a vegetable. Either way, it doesn't have a whole lot of taste (vague leafy green taste), so its easy to flavor any way you want.
My friend from Jamaica says that eating calaloo will give you energy, and that must be true, because I am downright hyper..
