| Amaranth: Direct seed or set transplants after danger of frost, in rich soil and full sun. Space 2-3 feet apart. Drought tolerant, but more productive with adequate moisture. Harvest young leaves for greens all summer long. Seed matures over a long period, so must be collected several times for best production; or, cut and hang upside-down indoors, collecting seeds on a tarp as they fall. (Some threshing may be necessary.) 100-200 seeds per packet. This crop is easy to grow, quite colorful and makes delicious greens and grain. A good ornamental plant for landscaping.

Elephant Head
This heirloom was brought to the US from Germany in the 1880s
and so named because the huge flower takes on the appearance
of an elephant’s trunk. The 3'-5' plants produce flowers that are
deep reddish-purple in color. A striking variety that is among the
most unique we sell.

Greek Giant
Seed sent to us by Dr. Joseph Philip of Pennsylvania. He collected seed originally near the town of Herakleion, Crete, years ago and has grown it ever since. Entire plant is reddish-pink, reaching 3 1/2 feet tall in most situations, but may approach 5 feet in very rich soil. Plants branch relatively little for an amaranth and produce most of the red seed heads at the top of the plant. Very Attractive!

Hartman's Giant
Large plants can grow to 10’ and produce large, beautiful seed
heads. Stems are a bright burgundy color. This variety was from
Mr. Hartman of Jacksonville, Oregon. In the 1970s he had a yearly
contest, offering the winner a $100 prize for the nearest guess as
to how many seeds were in his 2-gallon jar.

Hubei
Attractive red flowers on short, sprawling plants that can reach 4’
across. We received our seeds for this variety from our Australian
friend, Rose-Marie Lacherez, and she received the seeds in 1995
from a Chinese researcher (Bi Jihuan) who, at the time, was the
director of the agricultural college of Hubei, China.

Love-Lies-Bleeding
60 days. Tall 3'-4' plants are covered with very long rope-like flowers that are a deep brilliant red color. One of the most striking plants for any garden and so easy to grow. Amaranth is one of our favorite crops! A good seed producer, too. This is a very old heirloom, a pre-1700 variety, that was very popular. Leaves are tasty as cooked greens.

Mexico City Red
Collected by us on a seed collecting trip in 2005. This variety was growing in a large field in a high mountain valley near Mexico City. Attractive plants grow 6-8 feet tall. Leaves and stalks have a reddish tinge. A long-season type with colorful, large red seed heads that produce a delicious tan grain. It is great to see the Native American crop being grown again in Mexico, as Mexico's native people were forbidden to grow this crop while under Spanish and Catholic rule for many years.
