| RHUBARB
(Rheum rhabarbarum) 25 seeds per packet. Start seeds in early spring, either direct-sown in the garden or indoors. Set out at about the last frost date of spring. Plants need very rich soil to grow quickly to size. Full-sun except in hot summer climates, where some afternoon shade may be helpful. Harvest begins in the second spring. Twist the leaves off rather than cutting, and harvest until leaf-size dwindles, then stop picking for the season.

Thick stalks are popular for making delicious pies, cobbler and preserves. This variety can be harvested starting as soon as the 2nd season. Rhubarb is very popular in Canada and the north. Do not eat the leaves, as they can contain toxic amounts of oxalic acid.
